Specific Question: All my questions are going to be based upon Uni Adelaide
1). For Uadel, the UCAT is the gatekeeping mechanism right? So if a candidate does not pass the threshold then there is no chance for interview?
2). What are my chances of Uadel?
3). Where would I need to place in interviews to have a chance at an offer? (Uadel)

1) Correct for both Adel Med & Dent
2) I'd say 20-30% chance for Adel med offer. Not sure about Dent
3) My unscientific method converts 20-30% chance to 70-80+%ile interview.

Specific Question: Interview chance? A bit worried about UNSW maybe putting equal weight on SJT compared to the first four sections' total.

I am fairly certain you will get interviews at all three schools.
Chances for place offer are the standard 25-30% for JMP & WSU. Around 70% for UNSW.

Specific Question: Do I have a decent shot at getting an unbonded spot at UQ with a 99 ATAR? I'm not really sure how the maths bonuses work for UQ, it sounds like they just add 2 to your ATAR which seems a bit ridiculous.

Yes 92%ile UCAT is comparable to 93rd UMAT, so you should get UQ Dent. UQ Med bonded is possible but not for NZ students.
Absolutely zero chance for USyd (unless you mean you want to try in 3-4 years time haha).
Should get Adelaide interviews with about 20% chance of med place offer, you will need a near top interview. Not sure about Adel Dent.

Maybe borderline for WSU interview, but you should get interviews with Adelaide, JMP, UNSW.

It's hard to say with certainty for JMP due to the changes in the way they're using UCAT compared to UMAT. Hopefully is the best I can do, sorry! Probably not for UWS, despite your GWS status (but, again, hopefully!). Still apply to both, though, because you never know!

For applicants that have commenced university, is it the GPA up until this point that is considered or the GPA by the end of the year?

You should get interviews with JMP and WSU.
If you qualify for a place offer in Dec/Jan they will verify your year-end GPA against the hurdle.

Queensland doesn't use ATAR, it uses OP. But yes, assuming your Maths courses meet UQ bonus requirements, you should be good to go for Provisional Med at UQ. Good chance for UWA interview and UAdel interview. I don't think so for Monash, UNSW will also be tight, I'd think.

You should get interviews at all who offer them, except maybe Monash which is more of an unknown for interstate applicants. I'm not sure how many people UWA and Curtin interview to be able to provide info on offer chances. A1 may be able to provide more info.

Added by A1 : It's difficult to estimate chances for UWA & Curtin since we don't have a lot of WA data to work with. I'd say around 50-60% for both.

The difference between 98 and 99 ATAR is so great (particularly for those two Universities) that it is basically impossible to predict, sorry. With 99+, you should get a UNSW interview, particularly with EAS (actually, this will probably help secure you an interview invite, even if your ATAR ends up closer to 98). Monash is harder to predict for interstate applicants, does your EAS apply there, too?

Monash make it very hard for non-Victorians. I'd like to say yes, but I don't know how confident we can be, given your UCAT. You'd get interviews at USyd, possibly UAdel (it will be a squeeze if last year is anything to go by), JMP, possibly UNSW, and provisional Med offers at Griffith, Flinders, UMelb, and possibly direct entry to UTAS.
