It's not smart to place your bet on the admission team neglecting their responsibilities.
The following documents list the subjects they accept for prerequisites. Try to find one that you can complete before the deadline.
If you’ve not done the pre-requisites then no, you’re not eligible, and yes, they do check. It’s unlikely you’d be able to complete a bridging course in time. If this is a high preference course for you, you should contact UQ Dent admissions (not general Uni admissions) to see if there is a bridging course they would accept.

but to anyone else in my situation: do the JCU Bridging Course (CH0020) and Sign up ASAP, they actually began on the 21st, but the Uni admissions team and professor worked magic and were able to get me enrolled today itself. And it only costs $50.
The only problem is that the results are published on the 23rd of December in this bridging course, and I've contacted QTAC and UQ about if this is too close to the 12 Jan Offer Round, and they both say they don't know but to try anyway - and if you miss out you will likely be considered for additional rounds. So if anyone here may know then please let me know.
I think the reason JCU even offers this bridging course is for its own dentistry course. And here is what they said in their offer letter to me regarding prerequisites for their BDS:
" If you are enrolling in CH0020 to meet subject pre-requisites for the Bachelor of Dental Surgery
please ensure you add this course to your QTAC application. "
So, Since UQ and JCU have the same offer round, maybe I might be safe - but I will double check with JCU to verify if they want their students to have added the qualification by the 9th of Dec, or the results date.
ps - Also now that I have enrolled in that bridging course, how do I add the qualification to my QTAC, I can't seem to find a way how. Maybe only they can do it once results are released.
